Easy Shmeezy Dinner Idea and a Bridal/Baby shower tip

For all you out there that don't especially like the whole meal preparation thing here is another great easy one. I got this from a friend when we were doing freezer meals in a group.

Calzones:

Ingredients-
Frozen bread dough (either loaves or rolls - I like Rhodes)
8 oz. bag of pepperoni (ham works great too)
Bag of shredded cheese (cheddar, mozzarella, or both)
Spaghetti Sauce

Preperation-
The night before or morning of the meal place frozen bread dough on sprayed cookie sheet and cover with plastic wrap. At meal prep time, divide each loaf into 6-8 parts. Roll each into a circle. Distribute cheese and pepperoni onto circles. Fold over and pinch shut then place onto sprayed cookie sheet. Bake at 350 for about 15 minutes. Warm up a bottle of spaghetti sauce for dipping.

Best part about this recipe -
1 - I haven't met anyone who doesn't like these.
2 - If you mess up the Rhodes dough, even if it is your fault, Rhodes will replace your dough for free.
3 - You can make a bunch (kids can help because who cares what they look like) and freeze them in individual sandwich bags. Just put them in the fridge the morning you want them or I've even know people to bake them right out of the freezer.
4 - You could even hide vegetables in there (i.e. mushrooms, broccoli ...) and with all the cheese your kids probably won't notice.

BABY/BRIDAL SHOWER TIP:::
Oh and here's a great party tip (if you live in Utah - sorry Claudia. :> ) Rhodes has a place in Murray where for a small fee they will help you put on a Bridal or Baby Shower. There is a demonstration of great easy ideas for using frozen dough, then you get to eat from a tasty spread THEY make and THEY clean up, then everyone in your party gets a free bag of frozen dough. They let you stay as long as you want and open gifts etc. then you can box up the leftover treats to take home. You don't have to clean your house and try to find somewhere for your kids and spouse to hide out until it's over. Sweet!!

The Bridal/Baby Shower tip sounds awesome. I don't feel like I'm missing out - The only baby and bridal showers I go to are coworkers' (don't have those anymore) and ward members' (no one is/has been pregnant since we moved in except for me!).

Onto dinner: Here's my easiest dinner (best part - it only dirties one pot).

Spaghetti alla Carbonara

4 beaten eggs
1/2 C grated parmesan cheese
1/2 pound bacon, cut in small pieces
1 pound spaghetti

Beat eggs very well, add grated cheese, mix, and set aside.

Cook spaghetti, drain.

In the now-dry spaghetti cooking pot, cook bacon until crisp. Discard half the fat. Add the spaghetti noodles back to the pot, along with the egg and cheese mixture, and cook, stirring for a minute or two until the eggs are fully cooked.

Serve with green salad.

Forgot to mention about the carbonara: It freezes and re-heats very well, if a pound of pasta seems like too much for a small family :-), and as a bonus, you now have dinner for 2 nights instead of one!

Sounds tasty and easy - you can never go wrong with bacon! And I love the freezing half your dinner for later thing - it makes me much more motivated to cook. Tristan sent me a couple tasty sounding recipes too that I'll try.
I can't believe no one in your ward is pregnant - oh wait, you don't live in Utah anymore! :>

Your kids sound old enough to get dressed by themselves and therefore cook (ha!) so I bet you can convince at least ONE of them that cooking is totally fun. Maybe one will become a chef, start their own restaurant and you will NEVER have to cook again!

I made a batch of chocolate chip zucchini bread a couple days. it turned out really good. My kids and i ate an entire loaf in one day. Yummy! Here i the recipe:
6 eggs
4 cups sugar
2 cups oil
4-5 cups shredded zucchini
6 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons salt
1 tablespoon cinnamon
1 tablespoon vanilla
1 (12 ounce) package miniature Chocolate chips

Preheat oven to 325 degrees.
Beat together eggs, sugar and oil.
Add zucchini and remaining ingredients, mixing well.
Bake in 4 well-greased loaf pans for about one hour.
