I have a real weakness for treats - but I'm picky they have to be worth the calories, fat, and blah blah blah. I blame my mother. Like I mentioned in an earlier blog she makes amazing treats. Todd, Evan and I usually head to SLC to visit the fam about once a month. We stay at Jackie's Bed, Breakfast, Lunch and Dinner (as we so fittingly named it) and gain 5 lbs each. Well, except Evan of course - he doesn't hold still long enough to gain weight. Then we spend the next 3 or so weeks trying to lose it. My mom usually sends us home with all the leftover treats she made so I guess it's really only 2 weeks we try to shed the treat weight. Thus, I don't make many treats myself because I need the 2 weeks to fit back into my jeans. Anyhow, you get the picture.
So all your talk of Birthday cakes and class treats (you know who you are!) got to my sweet teeth (I have at least 10) so I was forced to make a treat. Luckily one of my roommates from college came over to eat dinner with us so I could send her home with some. (I can't make treats without sharing - I also blame my mom for that). I will share my mom's recipe. If I can make this recipe and it tastes good - anyone can! Plus it's a good way to use up old bananas (the blacker the better, trust me).
Jackie's Banana Bread
(Ok, I'm pretty sure she got it from somewhere but I'm positive she tweaked it somehow to make it better.)

Jackie's Banana Bread
Ingredients:
3/4 cup Butter (NOT margarine)
1 1/2 cups Sugar
3 Eggs
1 1/2 cups mashed bananas (about 3 bananas)
1/4 cup + 2 Tbs. Milk
1 1/2 tsp. Lemon Juice (I've also used Lime juice)
3 Cups Flour
2 1/4 tsp. Baking Powder
3/4 tsp. Baking Soda
1/4 tsp. Salt
Mixing Instructions:
In a small bowl combine milk and lemon juice, stir and set aside. Preheat oven to 350. In a larger mixing bowl, cream butter and sugar. Add eggs, mashed bananas, and milk/lemon juice mixture then mix. Add all dry ingredients and mix until homogeneous. Pour batter into a greased and floured regular bundt pan. Bake 40 - 45 minutes.
Note: I've also added chocolate chips because chocolate chips make almost everything taste better.
Yummy!! I would have posted a picture but there would have to be banana bread left to take the picture in the first place. I suppose I should clear off the treadmill tomorrow...

If I ever move back to Utah, I'm buying the house next door to your mom, so I can get my hands on some of her cooking. I remember it fondly from childhood! I also remember that she is a great seamstress, so she could probably put elastic in all my waistbands...

Hey, I've still got birthday cake left over with filling that is to die for and a plate of homemade cookies from my sister in law. You should stop by on Saturday and I'll send you home with a plate.
And I've seen recent pictures of you, Sarah. No one, least of all me, is buying that you can't get into your jeans, but thank you for the banana bread recipe. I love banana bread. And we all know that I have a pretty steady supply of rotting bananas around here. If not, I'll just drop by Corbie's house.
Claudia - doubt you really need elastic in your waistband and using the word homogenous comes pretty automatic. I actually couldn't think of another word! I worked as a formulator (i.e. fuffa chemist :> ) for a few years and that's pretty much how 90% of the formulas ended. ha!
Tristan - Your cake and cookie offer sounds delicious but my mom hasn't seen us for a few weeks at her house so it might be a 10 lb weekend already!
Speaking of 10 lb weekend - do you all remember when we used to hang out at my house, watch movies and eat a little popcorn with our butter??? yummmmm
You could always go back on the "dance company diet"...
At least you make sure they're worth the fat and calories... I need to do that I just eat whatever looks good. Especially around this time of year when all the treats are laying around the house.
